Abstract

Fructooligosaccharides (FOSs) are short-chain sugar molecules, which are useful for a variety of purposes. They possess a number of desirable characteristics, such as low calories, no carcinogenicity, and usefulness as prebiotics. There has been increasing interest in neo-FOSs recently due to their superior Bifido-stimulating effect and chemical and thermal stability compared to their counterpart FOSs. This article reviews their enzymatic preparation and the purification of the end products.
